Chances are, you’re about ready to carve your pumpkins and set them on your porch in anticipation of our favorite spooky October holiday, Halloween. And buried within the mushy gushy guts are seeds that, when toasted GOLDEN, are one of our FAVORITE October snacks! We think you’re probably in agreement that getting your pepitas the good ol’ fashioned way is WAY better than buying them at a grocery store. Can we get a hell yeah?

Here’s a really tasty ROCKtober salad that’ll make you FALL in love with pepitas! Check it out:

 

Pepita Salad

  • 1/2 head cauliflower, blanched and blended (or raw)
  • 4 C kale, massaged lightly
  • 1 C sundried or roasted tomatoes
  • 1 C butternut squash, precooked, cubed
  • 1/4 C pepitas (fresh pumpkin seeds toasted for 45 mins @ 350F OR grab some toasted pepitas at your local grocery store)

Lemon Tahini Dressing:

  • 1/4 C extra virgin olive oil
  • 1 t organic honey
  • 1 T parsley
  • 1 T gluten-free tamari
  • 1T tahini paste
  • 1 garlic clove
  • 1 t ginger
  • 1 t toasted sesame oil
  • Juice of one lemon
  • S+P

Combine all ingredients. Top with Lemon Tahini Dressing. Sprinkle with your freshly toasted pepitas and enjoy!
