Peanut Butter Cups

What’s better than a Peanut Butter Cup? Nothing. Between the creamy texture and salty taste of the PB and the rich, familiar decadence of chocolate, we can’t imagine anything better… Well, one thing. Peanut butter cups being healthy for us. What would you do if we told you we remixed peanut butter cups to make all your dreams come true?!We removed all hydrogenated oils, sugars, sodium and calories from the traditional Halloween treat, and don’t worry Posse, we did NOT remove the delicious taste! Your remixed peanut butter cups are made with extra virgin coconut oil, which is amazing for your digestive system, skin, hair and nails, and uses stevia instead of sugar. We have a feeling you’ll be POUNDing more than one of these.

POUND Peanut Butter Cups
(Recipe adapted from Prevention)

Ingredients (Bottom Layer):

  • 2 Tbsp. coconut oil, melted
  • ¼ cup smooth peanut butter (all-natural)
  • 1 tsp. pure vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 8 drops of liquid stevia (or to taste)

Ingredients (Top Layer):

  • 2 Tbsp. coconut oil, melted
  • ¼ cup natural smooth peanut butter
  • ½ tsp. pure vanilla extract
  • Optional: unsweetened coconut

Directions:

  1. Line a mini muffin pan with 12 cupcake trays.
  2. Stir all ingredients for the bottom layer together until smooth (you may have to melt the coconut oil and peanut butter for 20 seconds to get them to mix well) and divide between the wells (each well should be about half full).
  3. Put the tray in the freezer on a flat surface and freeze until solid (15-20 minutes.)
  4. While your bottom layer is in the freezer, stir all ingredients together for the top layer until smooth and divide on top of the frozen chocolate mixture.
  5. Return to the freezer and freeze until solid. Important: store your cups in the freezer and eat them as soon as they come out.

This recipe makes 12 peanut butter cups that are each 105 calories, 1.3g carbs and 2.9g protein.
