27 Dec Sweet Potato Toast
The best part about the holidays are the leftovers, right? Putting extra ingredients to use is like a puzzle and it's often where our best creations come to life! We've heard a lot about sweet potato toast recently but now we're giving it a try ourselves. The best part is, you can use any toppings you want (and you know we LOVE toppings!).
The directions are simple: Grab a sweet potato and peel it. Cut it into 1/2 inch-thick rounds and toast them, like bread. Note that it may take a couple rounds in the toaster to cook them all the way so don't be afraid to toast them 2-3 times on high! You want the slices to be soft but slightly browned - just like toast!
Once your toast is ready, it's time for toppings! We chose to make 3 different versions of sweet potato toast:
- mashed avocado
- almond butter and medjool dates
- almond butter, banana, and cinnamon
