A little blackbird told us that the Beatles were big fans of sandwiches—just like us! Between the deli lunch meat piled high, slices of delicious cheese and of course condiments, sandwiches can quickly turn into a not-so-healthy lunch option.
In honor of the famous foursome’s favorite food, we’re saving you from lunchtime woes with our Green Submarine Sandwich recipe. We grabbed some sourdough wheat bread and piled it high with our favorite veggies and our signature Green Goodness aioli. Veggies may not seem like the most exciting center for a sandwich, but these greens add crunchy texture and an amazing taste to this sub. Best of all, it won’t throw off your day of good decision making.
Green Goodness Aioli
Blend all ingredients until fully incorporated
- 1/3 C chopped chives
- 1T dry taragon
- 2 garlic cloves
- 2 anchovy fillets
- zest and juice of 1/2 lemon
- 1/4 t salt
- 1/2 good mayonnaise (olive oil based)
How to Quick Pickle Onions
Combine the first 5 ingredients below and bring to a low simmer. In a medium mason jar, combine onion slices and heated ingredients. Put the lid on, shake and refrigerate.
- 1/4 C apple cider vinegar
- 1/4 white wine vinegar
- 1 T sugar
- 1 t salt
- 1/4 t black peppercorns, lightly crushed
- 1 white onion, thinly sliced
Green Submarine
- 2 slices of sourdough wheat bread (toasted)
- 1T Green Goodness aioli
- 1 persian cucumber, thinly sliced
- 1/2 small, ripe avocado, sliced
- handful of butter lettuce
- handful of sprouts
- a few slices of pickled onion
Choose your favorite greens to add to this sandwich, but make sure you give this original a try. We promise, the sprouts and butter lettuce give it such a great crunch. We can’t wait to see your green submarines! Make sure you snap a picture before you gobble them all up.
