Kickin’ Orange Chicken

We’re pretty confident that orange chicken, although radioactive-orange and suspiciously tangy, is one of the BEST comfort foods on earth. Any Chinese takeout food, for that matter, lights quite a savory fire on our taste buds… and in our bellies! Loaded with excessive amounts of sodium (9,000 mg in ONE SERVING when 2,000 mg is a good daily max!), white rice, corn-syrupy sauces and often, MSG — it turns out our trusty takeaway isn’t so trusty afterall.

But seriously. Orange Chicken was practically BEGGING to be Tweaked. Believe it or not, our cleaned up Kickin’ Orange Chicken is gluten-free, refined grain-free, lower in sodium, and is corn syrup and refined-sugar free! Plus, our sauce seriously holds its own against the original, so buckle up, taste buds!

Free-range, hormone-free, organic chicken is an excellent source of protein, but one of us eats meat, and alas, one of us does not. SO, keep in mind that you can sub Ahi Tuna or even firm tofu, if your body can tolerate soy products. ORANGE-you glad we created options for ALL of your dietary needs!? You betcha!

Kickin’ Orange Chicken

Kickin’ Sauce:

  • 3 cloves garlic, minced
  • ½ C fresh squeezed orange juice
  • ½ C coconut nectar
  • 2 T tamari
  • 2 T rice wine vinegar
  • ½ t ground ginger
  • ½ t fresh ground pepper
  • ¼ t crushed red pepper flakes
  • zest of one orange

Chicken Ingredients:

  • 2 lbs pasture raised chicken breast
  • 2 T coconut oil
  • 2 green onions
  • 1 T sesame seeds
  • 3 cups cooked quinoa

Directions:

  1. Season chicken with sea salt and pepper.
  2. Whisk sauce ingredients together until combined and set aside.
  3. Heat 2 T coconut oil over medium heat. Add chicken and saute for 4-5 minutes, stirring occasionally.
  4. Pour in sauce and stir to fully coat chicken. Bring sauce to a bowl and let boil for 1 – 2 minutes, until sauce thickens.
  5. Place chicken over quinoa with leftover sauce and garnish with green onions and sesame seeds.
